Vanilla Cupcake Recipe With Chocolate Frosting
Ingredients
For the cupcakes you will need:
2 cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, ½ cup butter, softened, 1 ¾ cups granulated sugar, 2 large eggs, 2 teaspoons vanilla extract, ½ cup sour cream, and 1 cup whole milk.
For the chocolate frosting you will need:
1 cup unsalted butter, softened, 4 tablespoons cocoa powder, 3 ½ to 4 cups powdered sugar, 3-4 tablespoons heavy cream or half-and-half, 1 teaspoon vanilla extract.
Instructions
Let's start off with the cupcakes. Preheat your oven to 350°F. Line two cupcake pans with 18 paper liners. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing in between each addition. Add the vanilla extract and mix until combined.
Slowly add in the dry ingredients, alternating with the sour cream and milk. Mix until just combined.
Fill each cupcake liner about two-thirds full. Bake for 18 minutes, or until a toothpick inserted comes out clean. Allow to cool completely before frosting.
Now it's time to make the frosting. In a large bowl, cream together the butter and cocoa powder until combined. Add in the powdered sugar one cup at a time, mixing between each addition. Once all the powdered sugar has been added, add the cream and vanilla extract. Beat on high speed for 2-3 minutes, or until light and fluffy.
Pipe or spread the frosting onto the cooled cupcakes. Decorate with sprinkles, if desired. Enjoy!
