Turn the dough out onto a lightly floured surface, and knead it gently for a few seconds. Divide the dough in half and shape into two discs. Wrap the dough discs in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch pie plate.

Making the filling:
