Ingredients

  • 12 cups of popped popcorn
  • 1/2 cup of butter
  • 1/2 cup of light corn syrup
  • 1 cup of brown sugar
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of kosher salt
  • 1/2 cup of chopped pecans or walnuts (optional)
  • 1/2 cup of semi-sweet chocolate chips
  • 1/2 cup of white chocolate chips
  • 1/4 cup of sprinkles or candy pieces (optional)

Instructions

The first step is to prepare your popcorn. Pop 12 cups of popcorn and spread it out on a parchment paper lined baking sheet.

In a large saucepan, add the butter, corn syrup, and brown sugar. Cook over medium heat, stirring frequently, until the mixture comes to a boil. Let it boil for 3 minutes, stirring constantly. Remove the pan from the heat and stir in the vanilla extract, baking soda, and salt. Pour the mixture over the popcorn and stir to coat.

Add the chopped nuts and chocolate chips and stir to combine. Working quickly, use a spoon to form the popcorn mixture into balls. Place the popcorn balls on a parchment paper lined baking sheet. Put the baking sheet in the refrigerator for about 10 minutes to let the popcorn balls set up.

When the popcorn balls are cool and set, melt the chocolate chips and white chocolate chips in separate bowls in the microwave. Dip each popcorn ball in the melted chocolate and let the excess drip off. Place the popcorn balls back on the baking sheet. Sprinkle with the sprinkles or candy pieces and put the baking sheet back in the refrigerator for 10 minutes to let the chocolate set. Enjoy!
