Instructions

For the Macarons:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, whisk the egg whites until foamy. Slowly add in the granulated sugar and whisk until stiff peaks form.
  3. In a separate bowl, combine the almond flour, cocoa powder, and powdered sugar. Sift the dry ingredients into the egg whites and fold together until combined and the mixture is thick and glossy.
  4. Using a pastry bag fitted with a large round tip, pipe the batter into 1-inch circles onto a parchment-lined baking sheet. Tap the baking sheet on the counter a few times to remove any air bubbles.

For the Filling:

  2. Add the vanilla extract and stir until combined. Allow the mixture to cool slightly before using.

Assembly:

  1. Once the macaron shells and filling have cooled, pipe a teaspoon of the filling onto the flat side of half of the macarons. Gently press the other half of the macarons onto the filling to form a sandwich.
  2. Refrigerate the macarons for at least 30 minutes before serving.
