Ingredients

  • 1 cup heavy cream
  • 2 tablespoons light corn syrup
  • 3/4 cup sugar
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 cups dark chocolate chips
  • 1 teaspoon coconut oil
  • Additional sea salt for sprinkling (optional)

Instructions

Making the Caramels

Begin by combining the cream, corn syrup, sugar, butter, and sea salt in a medium saucepan. Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved and the mixture begins to boil. Continue to cook the mixture, stirring occasionally, until it reaches 240°F on a candy thermometer. Once the mixture has reached temperature, remove it from the heat and stir in the vanilla extract.

Pour the hot caramel mixture into a lightly greased 9x13 inch baking pan. Allow the caramel to cool completely before moving on to the next step.

Adding the Chocolate

Once the caramel is cooled, it’s time to add the chocolate. Place the chocolate chips and coconut oil in a medium heat-safe bowl and set it over a pan of simmering water. Stir the chocolate occasionally until it is completely melted and smooth.

Pour the melted chocolate over the cooled caramel and spread it out into an even layer. Sprinkle the top of the chocolate with a little extra sea salt, if desired. Allow the chocolate to cool and set completely before cutting the caramels into small squares.

Serving and Storing

Serve the dark chocolate sea salt caramels as soon as the chocolate is set. Store the caramels in an airtight container in the refrigerator for up to two weeks. For best results, allow the caramels to come to room temperature before serving.
