Triple Chocolate Yule Log Recipe
Ingredients
For the cake you’ll need:
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder

Instructions
To make the cake, preheat your oven to 350 degrees F and line a 10-inch by 15-inch baking sheet with parchment paper. In a large bowl, beat together the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, until the mixture is glossy and stiff peaks form. In a separate bowl, whisk together the egg yolks, cocoa powder, vanilla, and salt until combined. Fold the egg yolk mixture into the egg whites until well blended.
Sift the flour into the bowl and gently fold it in until just combined. Pour the batter onto the parchment-lined baking sheet and spread it into an even layer. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
To make the frosting, melt the semi-sweet and dark chocolate chips together in a double boiler or in the microwave. In a separate bowl, beat together the heavy cream, butter, vanilla, and salt until fluffy. Gradually add the confectioners’ sugar and beat until thick and creamy. Add the melted chocolate and beat until combined.
Spread the frosting over the cooled cake and sprinkle the white chocolate chips over the top. Roll the cake up from one of the short ends and chill for at least 30 minutes before slicing.
