• 1/2 cup cocoa powder
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup vegetable oil
• 1 teaspoon vanilla extract
• 4 large eggs
• 1 cup buttermilk
For the Caramel Filling:
• 1 cup heavy cream
• 1 cup light corn syrup
• 1 cup light brown sugar
• 1/4 teaspoon salt
• 2 tablespoons butter
• 1 teaspoon vanilla extract
For the Chocolate Ganache:
• 8 ounces semi-sweet chocolate, chopped
• 1 cup heavy cream
For the Topping:
• 1/2 cup chopped toasted pecans
Instructions
To make the cake: Preheat the oven to 350°F. Grease and flour two 9-inch cake pans. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, whisk together the oil, vanilla, eggs, and buttermilk. Slowly add the wet ingredients to the dry ingredients and mix until combined. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before assembling the cake.
To make the caramel filling: In a medium saucepan over medium heat, combine the cream, corn syrup, brown sugar, and salt. Bring the mixture to a boil, stirring occasionally. Reduce the heat to low and simmer for 10 minutes, stirring occasionally. Remove the pan from the heat and stir in the butter and vanilla. Allow the mixture to cool completely before using.
To assemble the cake: Place one of the cake layers on a cake stand or plate. Spread the caramel filling over the top of the cake, then top with the second cake layer. Place the cake in the refrigerator to chill while you make the chocolate ganache.
To make the chocolate ganache: Place the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan over medium heat until it comes to a boil. Pour the hot cream over the chocolate and let sit for 2 minutes. Whisk the mixture until smooth. Allow the ganache to cool slightly before pouring over the cake. Use an offset spatula to spread the ganache over the top and sides of the cake. Sprinkle the chopped pecans over the top of the cake. Refrigerate the cake for at least one hour before slicing and serving.
