Cheesecake Factory Chocolate Mousse Cake Recipe
Chocolate mousse cake has been a favorite of mine since I was a kid. The Cheesecake Factory's version of this classic dessert is one of the best I've ever had. The layers of moist chocolaty cake, creamy mousse filling, and decadent chocolate frosting make this cake a real winner. Ingredients
For the cake:
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1/2 cup butter, softened
- 1 1/2 cups granulated sugar
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
For the mousse filling:
- 4 tablespoons butter
- 4 ounces semisweet chocolate, chopped
- 2 tablespoons water
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
- 2 cups heavy cream
For the chocolate frosting:
- 1/2 cup butter, softened
- 2 tablespoons cocoa powder
- 2 tablespoons whole milk
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
Instructions
To make the cake: Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the dry ingredients and mix until just combined. Add the buttermilk and vanilla and mix until just combined. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
To make the mousse filling: In a medium saucepan, melt the butter and chocolate over low heat. Add the water, corn syrup, and vanilla and stir until smooth. Remove from the heat and allow to cool slightly. In a medium bowl, beat the heavy cream until light and fluffy. Add the cooled chocolate mixture and mix until just combined.
To assemble the cake: Place one of the cooled cakes on a cake stand or plate. Spread the mousse filling over the top. Place the second cake on top and press down lightly. Place in the refrigerator to chill for at least 30 minutes.
To make the frosting: In a medium bowl, cream together the butter and cocoa powder. Add the milk, confectioners' sugar, and vanilla and mix until light and fluffy. Spread the frosting over the chilled cake and refrigerate until ready to serve.
