Ingredients

  • 100g (3 1/2 oz) caster sugar
  • 75g (3oz) self-raising flour
  • 25g (1oz) cocoa powder, sifted

  • 2 tablespoon of golden syrup
  • 2 tablespoon of single cream
  • Grated chocolate, to decorate

Instructions

Preheat your oven to 190°C/Gas Mark 5. Grease and line a Swiss roll tin with baking parchment. In a large bowl, whisk together the eggs and sugar until the mixture is thick and creamy. Sift in the flour and cocoa powder, then fold in until the mixture is combined. Spread the mixture into the prepared tin and bake in the oven for 15 minutes. When the sponge is cooked, turn it out onto a piece of baking parchment lined with greaseproof paper. Peel off the lining paper and trim the edges, then leave to cool.

When the sponge is cool, melt the butter and chocolate in a heatproof bowl over a pan of simmering water. Remove from the heat and stir in the golden syrup and cream. Spread the mixture over the sponge and roll up, using the parchment to help. Wrap in the parchment and chill in the fridge for at least 3 hours.

To serve, unwrap the log and transfer to a serving plate. Dust with the grated chocolate and cut into slices. Enjoy with a cup of tea!
